3 (8oz) pks cream cheese
4 c shredded cheddar cheese
1 c finely chopped onion
2 tbsp pesto
1/4 tsp mustard
a few dashes of hot pepper sauce
4 tbsp horseradish
1 (8oz) whipped cream cheese
Garnishes: roasted red pepper, olives, pretzels, baby carrot, etc...

Directions:
Directions:
Soften pkgs of cream cheese. Mix cream cheese, cheddar,onion, pesto, mustard, pepper sauce, and 1 tbsp horseradish until well blended. Form mixture into two large balls, one slightly bigger than the other. These may need to be refrigerated for a while to make them easier to work with.

Stack balls like a snowman. Combine remaining 3 tbsp horseradish with the whipped cream cheese. Use less horseradish if it may be too strong for you.

Frost the cheese balls with the whipped cream cheese mixture.

Add garnishes. I use black olives for the eyes and buttons, red pepper for a scarf, carrot nose (may need trimming) and pretzel arms. However, the possibilities are limitless.
