Bison Burger Recipe

ground bison
montreal steak seasoning
hamburger buns
sweet onion
garlic
mushrooms
extra virgin olive oil
salt
pepper
1 egg

Directions:
Break up the Bison into burger portions and knead in the montreal steak seasoning (available in the spice section).

Put mushrooms, onion, garlic, salt and pepper in a frying pan with extra virgin olive oil and let it cook on low hear stirring occasionally until onions are translucent (do not rush this step, the more you cook the onions, the better they will be).

While the toppings are cooking cook the bison burgers on a charcoal grill to no more then medium temp. (these can be made on a gas grill or on a frying pan but for full flavor use an all charcoal grill.

Make sure to grill the hamburger buns after the burgers are done.

Place the the burger on the bottom bun with a few slices of cheese on top.

Fry up an egg and place on top of the cheese.

Add another layer of cheese. Add onion mix and then add the top bun.

DO NOT ADD SAUCE!!!! Between the medium rare bison meat and the egg there should be plenty of great flavors that should not be masked by sauce.

Enjoy! This recipe can also be used with ground turkey for a healthier twist however BBQ sauce is recommended because turkey is a very lean dry meat.
