1 LB. BACON CUT IN BIT-SIZE PIECES
½ TO 1 LB. BONELESS SKINLESS CHICKEN BREAST CUT IN BITE-SIZE PIECES. USUALLY ONE LARGE BREAST WILL DO.
3 TBS. CHILI POWDER OR TO TASTE
1 CUP BROWN SUGAR
UP TO ½ CUP H2O AS NEEDED

COOKED RICE.

IN A LARGE PAN, COOK BACON OVER MEDIUM HIGH HEAT UNTIL NEARLY DONE. DO NOT DRAIN. STIR IN CHILI POWDER AND CHICKEN. CONTINUE COOKING, STIRRING OCCASIONALLY, UNTIL CHICKEN AND BACON ARE FULLY COOKED. ADD BROWN SUGAR AND COOK UNTIL FULLY DISSOLVED AND SAUCE BEGINS TO THICKEN, ABOUT 4-5 MINUTES.
(BE CAREFUL ONCE THE SUGAR IS ADDED NOT TO LET THE SAUCE TURN INTO TOFFEE.) ADD H2O IF NECESARRY TO THIN SAUCE. KEEP IN MIND THE SAUCE IS MORE OF A COATING. SERVE OVER HOT RICE.


*BACON IS EASIER TO CUT IF IT IS PARTIALLY FROZEN. CHICKEN ALSO.
