2 med sweet onions
3 Tbsp olive oil
2 Tbsp sugar
2 cans Campbell's Condensed French Onion Soup
3 cans Campbell's Condensed Beef Broth
2 cans water
5 Tbsp sherry
salt
pepper
6 slices mozzarella or provolone cheese
french bread (sliced 1 inch thick and toasted)

Directions:
Directions:
Brown sliced onion in olive oil and sugar until caramelized in large soup pot. Add 1 Tbsp salt and pepper. Add soup and 2 cans beef broth and 1 can of water. Bring to boil.

Turn heat to medium-low. Simmer for 4-6 hours, stirring occasionally.

After 2 hours, add 3rd can Beef Broth, 1 can water, and 3 Tbsp sherry.

30 minutes before serving, add 2 Tbsp sherry, salt and pepper to taste.

Portion soup into oven proof bowls and add 1-2 slices of toasted french bread and thin slice of cheese on top.

Put bowls into oven on broil. Broil approximately 6-9 minutes until cheese is toasted and bubbly.
