12 Eggs
6 English Muffins
12 slices smoked turkey breast
12 slices light Swiss cheese
Pepper or Tabasco Sauce/Hot Sauce

**Optional
Hollandaise Sauce Mix
Butter
Water

Canned Asparagus Tips

Directions:
Directions:
Preheat Oven to 350º
Spray Muffin Tin (12)
Cut Cheese Slices in half
Put turkey breast in each muffin cup
Top with 1/2 a cheese slice
Drop egg on top
Spice with pepper or hot sauce if preferred
Top with remaining 1/2 slice of cheese
Bake in oven for 20 minutes or until yolk is cooked to your preferance.
1/2 and toast English muffins, this can be done all at once on a cookie sheet in the oven.

Plate English muffins, spoon egg out of tin onto muffin.
Serve with or without hollandaise sauce. Lighter version is without.

This is so easy for feeding a crowd without the mess of poaching eggs. Substitute ham for the turkey if you like.

I usually eliminate the hollandaise sauce and top with canned Asparagus Tips.
