6- 8 Chicken breast, skinless, boneless
4 sticks celery
15 baby carrots
2 onions
fresh cilantro
3 tbls minced garlic
5 lbs potatoes, peeled, and cubed
2-3 tbls chicken base in jar
1 can carnation milk
1/2 bag instant mashed potatoes
salt & pepper to taste

Directions:
Directions:
In large stock pot, place chicken, celery, carrots, onions, cilantro, salt & pepper and garlic, cover with water, at least 2 inches over ingredients. Bring to a boil, then lower to medium heat and cook until chick is tender. Remove chicken, when cool cut into bite-sized pieces. Strain broth. Put strained vegetables in blender with a little broth and puree. Add broth, puree and chicken back into stock pot. Add potatoes, cook over low heat until tender. Taste to see if you have enough salt and pepper. Add milk and stir in instant potatoes. Take off heat and let set for few minutes to thicken. Serve with crusty bread.
