4 - 5 lg yellow onions (about 1 1/2 lbs) (sliced)
3 Tbsp butter
1/4 tsp pepper (coarsely ground)
3 (10 3/4 oz) cans beef broth
3 cups water
1 Tbsp flour
1 bay leaf
salt
pepper
6 to 8 slices of french bread
2 Tbsp parmesan cheese
1 cup gruyere or swiss cheese (grated)

in large saucepan - heat over moderately high heat butter. Add onions and pepper to butter. Saute onions in butter til golden brown. Sprinkle flour and stir until all traces of flour disappear. Cook for 1 minute. Remove from heat.

Gradually add beef broth stirring constantly. Stir in water and bay leaf - return to heat and bring mixture to a boil. Reduce heat to low and cook uncovered for 30 to 40 minutes. Discard bay leaf.

Taste soup and season with salt and pepper.

Toast the bread slices until golden brown. Place soup in broilerproof bowls and arrange toast slices on top of soup (do not press down). Add the cheeses and place bowls on a cookie sheet. Broil or bake in 425º for about 6 minutes or until cheese melts and turns golden.

You can use 6 cups of boiling water with 5 knorr tablets in place of the beef broth and water above. Do not even need bread - Great for colds! Excellent!
