1/2 cup butter, melted
1 1/2 cup onion, chopped
1/2 cup green pepper, chopped
1/2 cup celery, chopped
3 cloves garlic, minced
2 tbls flour
1/2 cup Bloody Mary Mix
2 heaping tbls cream of celery soup
1 tsp salt
1 lb raw shrimp, peeled
1/2 tsp cayenne pepper
1/8 tsp tabasco
lemon juice
Hot cooked rice

In a 2 qt dish, melt butter and saute onion, green pepper, celery and garlic in microwave on high for 15 minutes, covered. Stir in flour and Bloody Mary mix. Add cream of celery soup and salt. Cover and microwave on high 5 minutes. Add shrimp, pepper and tabasco. Microwave on high 8 minutes, or until shrimp is pink and tender. Stir once or twice. Squeeze lemon juice over etouffee and serve over rice.
