2 cups sugar
1/2 cup butter, softened
1/2 cup shortening
5 eggs, separated
1 cup buttermilk
2 cups flour, sifted
1 cup coconut
1 tsp. vanilla
Icing:
8oz cream cheese
1 tsp vanilla
1 stick butter, softened
1 box powdered sugar
1 cup pecans

Directions:
Directions:
Cram butter, sugar and shortening. Add egg yolks, one at a time, beating well after each addition. Dissolve baking soda in buttermilk and alternately with flour to creamed mixture. Add coconut, fold in stiffly beaten egg whites. Add vanilla. Pour into greased and floured pans (3 8in). Bake for 25-30 minutes @ 350 º.
Icing; Cream all ingredients together and ice each layer, sides and top when cake is cool. Refrigerate.
