1 & 1/2 lbs raw shrimp, peeled and deveined
1 lg. tomato, diced
1/2 red onion, diced
1 serrano or jalapeņo pepper, diced
4 limes, squeezed
4 lemons, squeezed
1 orange, squeezed
1 lg. cucumber, peeled and diced
1 lg. avocado, diced
1/2 bunch of cilantro chp'd.

Directions:
Directions:
1. Blanch shrimp in boiling water for about 1 min., then shock in ice cold water. Strain when cools.
2. Cut shrimp in 1" pieces and add to bowl
3. Add citrus juices and marinate for 2 hrs.
4. Add red onion, tomatoes, chilies and cilantro. Marinate for 2 more hours.
5. Add avocado and cucumber before serving.

Serve with crackers.
