3 lbs. butternut squash, peeled, seeded and cubed
3 T. olive oil
3 T. butter
1 medium onion, chopped
6-8 cups chicken broth
salt
pepper

Directions:
Directions:
Preheat over to 350º. Toss butternut squash with olive oil, salt and pepper. Roast for 1 hour, stirring once. Melt butter in a saucepan. Add onion, cook until golden. Pour chicken broth into saucepan. Stir well. Add roasted butternut squash. Boil ingredients and then simmer for 15 minutes. Carefully transfer, 1 cup at a time, into blender. Puree. Place puree into crock pot, stir well and serve.
