1 (8 oz.) package cream cheese, softened
1 c. mayonnaise
2 tsp. curry powder
1 tsp. salt
6 c. chopped, cooked chicken
1 (8 oz.) can crushed pineapple
2/3 c. orange-flavored sweetened dried cranberries
1 c. chopped roasted, salted almonds (walnuts or pecans may be used).

Step One: Whisk together cream cheese, mayonnaise, curry powder, and salt in a large bowl; Stir in chicken, pineapple, and cranberries, just until blended.
Step Two: If desired, spoon mixture into a plastic wrap-lined 8" round cake pan; Cover and chill at least 8 hours, or up to 24 hours. Invert chicken salad onto a cake stand, and remove plastic wrap. Gently press chopped nuts onto sides of chicken salad.

If desired, prepare a garnish of parsley, blackberries, raspberries, and sliced peaches.
