1 Tbls. olive oil
1 1/2 cups finely diced yellow onion
1 lb. ground lamb
2 scallions minced
2 garlic cloves, minces
1 Tbls. minced mint leaves
1 1/2 tsp. salt
1/2 tsp. pepper
1 cup Spicy Yogurt dressing

Yogurt dressing:
2 cups plain yogurt
1/2 tsp. cayenne
1 Tbls. finely chopped mint leaves
salt and pepper to taste

Directions:
Directions:
The day before serving: Heat olive oil in a saute pan over low heat. Add onion and saute slowly until translucent. Drain excess oil. Break up lamb into a bowl. Add onion, scallions, garlic, mint, salt and pepper. Mix well. Cover and refrigerate overnight.
When ready to serve, soak 16 six-inch wooden skewers in water to help prevent the skewers from burning.
Divide lamb mixture into 16 equal pieces. Shape each piece into 1 inch diameter log, approximately 3 minches long. Thread each log lengthwise onto a skewer. Place the skewers on a hot grill and cook for about 5 minutes, turning once, until amb is medium rare.

Yogurt dressing:
Mix all ingredients together, serve at room temperature with the lamb skewers.
