1/2 lb. Italian Sausages
1 onion, peeled and chopped
2 carost, peeled and chopped
1/2 lb. mushrooms, rinsed, discolored stem ends trimmed, and thinly sliced
1 Roma tomato, rinsed, cored, and chopped
6 cups beef broth
3/4 cup quick cook barley
1 package frozen shopped spinach
sour cream
salt and pepper

Directions:
Directions:
Remove and discard casings from sausages.. Crumble meat into a 4 to 5 quart pan. Add onion, carrots, mushroom's, and tomato.
Stir often on high heat until meat begins to brown and vegetables are limp, 10 to 12 minutes.
Add broth and barley; scrape up browned bits. Add spinach. Bring to a boil over high heat, stirring occasionally. Cover, reduce heat, and simmer, stirring occasionally, until barley is tender to bite, about 10 minutes.
Ladle soup into bowls and add dollops of sour cream and salt and pepper to taste.
