4 - 7 inch flour tortillas
8 eggs
1/4 cup chopped green onions
butter
1 cup cooked black beans or canned refried beans, heated
3/4 cup mashed ripe avocado
3/4 cup prepared salsa
1/2 cup shredded cheddar cheese
Cilantro sprigs
Lime slices
Pickled chile peppers
Sour cream

Directions:

Stack tortillas and wrap them in aluminum foil. Place in a 300º oven for about 10 minutes to warm through.
Meanwhile, beat eggs with onions. Heat a little butter in a 7 inch skillet set over medium high heat. When butter begins to sizzle, pour in 1/4 of the egg mixture. Ass the eggs begin to set on the bottom, gently lift the edge's with a spatula and tilt the pan to let the uncooked portion run underneath. When the eggs are just set, slide them onto one of the warm tortillas. Spread with 1/4 cup of the beans in a think layer over the eggs. Top with 3 Tbls each, avocado and salsa, 2 Tbls. of the sliced olives and 1/4 cup of the cheese, distributing evenly. Roll up the tortilla and place, seam side down, on a square of aluminum foil. Wrap snugly; return to the oven to keep warm while preparing the remaining rolls. Garnish with cilantro, lime slices and chile peppers. Accompany with sour cream.
