1 small can refried beans
1/2 tsp ground cumin
1/4 tsp garlic powder
1 cup grated Monterey Jack Cheese
1-1/2 lb ground beef
3 cans (6 - 7 oz) green chili salsa
6 - 8 flour tortillas
3/4 lb Colby cheese, grated
2 large fresh tomatoes, peeled and chopped
Sliced onion or onion tops
Shredded lettuce
Avocados

Directions:
Directions:
Combine beans, cumin, garlic and Monterey Jack cheese in top of double boiler, heat over hot water until cheese is melted and then keep hot and covered until needed.

Cook beef until it loses red color; drain off fat; add 2 cans of salsa, bring to a boil and cook until most of the liquid evaporates.

Spread tortillas with bean mixture; spread meat mixture over beans and press down.

Lightly roll tortillas and place seam side down in a single layer in well greased baking pan (9 x 13)
Pour remaining can of salsa over top and around sides. Sprinkle with Colby cheese, tomatoes and onions. Bake uncovered in 350 degree oven 30 minutes, or until bubbly.
Serve with shredded lettuce and avocado on the side.
