2 1/2 lbs Chicken breasts
1 14-oz can Beef broth
1 14-oz can Tomatoes, undrained
1 small Onion, chopped
1 Green Pepper, chopped
1 17-oz can Whole Kernel Corn, drained
1 tbsp fresh chopped Cilantro
1 tsp Chili Powder
1/2 tsp Cumin
Salt and Pepper to taste
Tortilla Chips
6 ozs grated Cheddar or Monterey Jack cheese
Sliced Avocado
Cilantro sprigs

Directions:
Directions:
Simmer chicken in 4-5 cups of water for 45 minutes. Bone breasts and cut chicken into small chunks. Reserve 4 cups of broth.
Combine reserved chicken broth and beef broth in a large Dutch oven. Cook tomatoes, onion and green peppers in broth for 10 minutes. Add corn, cilantro, seasonings and chicken. Simmer for an additional 10 minutes.
To serve, put broken tortilla chips in bottom of 6 bowls. Add soup and top with grated cheese, avocado and cilantro leaves.
