1 loaf Italian bread, sliced ½ inch thick
½ cup red onion, diced
Extra Virgin olive oil
½ cup roasted red pepper, diced
¼ cup prepared pesto
1 tsp. Italian spice
¼ cup Parmesan cheese
¼ cup fresh basil, chopped
1 large tomato, diced
mozzarella cheese, grated

Directions:
Directions:
In a bowl, mix pesto and Parmesan cheese, set aside. In a separate bowl, mix diced tomato, red onion, red pepper, Italian spice, and basil. Arrange bread slices on cookie sheet. Brush one side of each slice of bread with a small amount of olive oil. Broil lightly. Turn slices over, and on unbrushed sides, spread a thin layer of the pesto mixture. Mound a portion of the tomato mixture on top of the pesto layer and sprinkle mozzarella cheese on top of the tomato mixture. Broil until cheese melts.
