1 cup cooking oil
1/4 t salt
2 cups sugar
1 t. Cinnamon
4 eggs (Separated)
1 t. nutmeg
4 T hot water
1 1/2 cup grated zucchini
2 1/2 cups sifted flour
1 cup nuts
3 t baking powder
1 t. vanilla

Directions:

Sift dry ingredients together. combine oil and sugar. Beat
until smooth. Add egg yolks,blend Add hot water, and dry ingredients. Stir in zucchini, nuts and vanilla beat well. Beat egg whites until stiff. fold in mixture. Bake 25 min at 350º
cool and frost with a frosting: 8 oz cream cheese 1 stick butter
2 cups powdered sugar 1 t. vanilla 1/2 cup pecans. Blend all ingredients together till smooth

This was mom's ( Betty Sinclair's) Recipe and she really liked to grow zucchini
and supply the whole town with zucchini
