2 Tbs olive oil
1 Medium onion, diced
1 Clove garlic, crushed and diced
2 Jalapeño, seeded and diced
1 Red bell pepper, seeded and diced
4 Cans great northern beans, rinsed well
2 Cans white shoepeg corn
1 Can chicken broth
1 Jar of your favorite salsa
1 lb Chicken breasts, skinless
Salt, pepper, and cumin to taste

Directions:

Pre-heat oven 350º, salt and pepper chicken breasts. Place in oven, cook 25-30 minutes until no longer pink. While chicken is cooking, heat olive oil in Dutch oven, add onion, garlic, bell pepper and jalapeño. Cook until soft.
Add in beans, corn, broth, salsa, Simmer until chicken is done.
Once chicken is cooked, dice and add to chili. Stir and heat through, serve.
Cheese, cilantro or sour cream may be added if desired
