1 16oz package ziti macaroni
1 lb lean ground beef
1 15 oz container ricotta cheese
1/2 c grated Parmesan cheese
1/4 c finely chopped parsley
1 egg, slightly beaten
1/4 tsp salt
1/4 tsp pepper
1 8 oz. pkg Mozzarella cheese, shredded

SAUCE:
1 medium onion, diced
1 medium clove garlic, minced
2 Tbsp oil
2 15 oz cans of tomato sauce
1 12 oz can tomato paste
2 tsp brown sugar
2 Tbsp chopped parsley
1 tsp oregano
1 tsp salt
1/8 tsp cracked pepper
1 bay leaf

Prepare sauce 1 hour ahead of time. In 3 qt saucepan over medium heat, cook onion, garlic in oil. Add tomato sauce and paste, sugar and spices. Heat to boiling over high heat. Reduce heat to medium low, partially cover and cook 30 minutes.

Meanwhile, in an 8 qt Dutch oven, prepare ziti macaroni as label directs, drain and set aside.
In same Dutch oven, cook ground beef until well browned, about 10 minutes, stirring occasionally. Preheat oven to 350º
Remove Dutch oven from heat; stir in ricotta, next 5 ingredients, and half of sauce until well mixed. Add ziti and toss gently to coat well. Spoon mixture into 13 x 9" baking pan; pour remaining sauce evenly over ziti mixture. Sprinkle with mozzarella. Bake casserole for 20 minutes or until hot and bubbly.
