1 cup Long Grain Rice
2 tbsp Butter or Margarine
1/2 cup chopped Onion
1 cup chopped Carrots
2 cups Broccoli Flowerets
1 medium Bell Pepper, chopped
2 cloves Garlic, minced or pressed
1 1/2 cups Chicken Broth
1 tbsp chopped Parsley
Dash Salt and Pepper
1 cup grated Cheddar Cheese

Directions:
Directions:
In a 2 quart casserole, saute the onions in the butter until soft.
Add the carrots. Cook over medium heat for about 3 minutes.
Add broccoli, bell pepper, garlic and rice. Stir to blend.
Add the chicken broth. Bring to a boil. Cover with tight-fitting lid.
Cook over low to medium heat for about 20 minutes or just until rice is done. Add parsley and salt and pepper.
With a fork, toss in the cheese. Don't mash the vegetables.
Put the casserole in oven. Broil at 350ºF for about 10 minutes or until top is slightly brown. Serve.
