3 c. diced carrots
2 tsp. grated onion
3/4 tsp. salt
1/2 c. milk
12 (single) salted crackers (crushed)
1 tsp. lemon juice
1/4 tsp. pepper
1 T. melted butter
1/4 c. grated cheese

Directions:
Directions:
Cook carrots until tender and mash. Add remaining ingredients except cheese. Put in a 9x9 greased baking dish. Bake at 375 degrees for 20 minutes. Remove from oven and sprinkle with cheese. Bake 10-15 minutes longer or until cheese is melted.
This is a tricky way to get kids to eat carrots.
