6 lb Chuck Roast or 7-Bone Roast
2 T Oil
Salt & Pepper
2 tsp Basil
1/2 C Water

Directions:
Directions:
Heat oven to 275.º Heat oil in cast iron pan or Dutch Oven. Brown roast on both sides in hot oil. Add 1/2 C water to pan. Sprinkle roast with salt, pepper and basil. Cover loosely with foil or lid of Dutch Oven and place in preheated oven. Bake 5-7 hours of till meat is falling off bone. Keep 1/4-1/2 C water with meat while I s cooking unless you like it dry and crispy.

Can also be cooked in a crock pot on high for 8 hours along with 1/2 C water, salt, pepper, basil. If using crockpot turn roast over after 4 hours and make sure there is always about 1/2 C water in crockpot during cooking.
Serve with ketchup.
