Meatballs:

2½ pounds spicy sausage
¾ cup minced garlic
¾ cup finely chopped onions
¾ cup finely diced carrots
¾ cup freshly chopped cilantro
2 tablespoons sugar
3 tablespoons cracked black pepper



Romesco Sauce:

½ cup roasted almonds
½ cup roasted garlic
2 roasted roma tomatoes
3 roasted red bell peppers
salt and pepper to taste

Directions:
Directions:
For meatballs: Mix ingredients, then roll into meatballs (size of ping pong ball). Deep fry until fully cooked. For sauce: Blacken red peppers on stove. Chopped, then blend together all ingredients. Serve on top of meatballs.
