1 shallot finely chopped
Serrano finely chopped
1-2 T. oil (orange or lime if avail)
1 c. OJ
1/2 c. brown sugar
2 T. honey
1 T. agave
3 c. cranberries
1 lime zest and juice
1 T. ginger (optional)
1/2 t. cinnamon (optional)
1/2 t. salt
pepper
Mandarin segments, and zest
1/4 c. cilantro chopped

Directions:
Directions:
Saute shallot and pepper in oil 3-4 min.
Bring OJ and sugars to boil, reduce heat.
Add cranberries and other ingredients except segments, zests, and cilantro.
Simmer 10-12 min.
Add rest of ingredients.
Can drizzle with more oil before serving.
