Cake:

3 eggs
2/3 c canned pumpkin
1 cup sugar
1 tsp salt
1 tsp soda
1/2 tsp cinnamon
3/4 c flour

Filling:

2 tbsp butter
1 tsp vanilla
8 oz cream cheese
1 c powdered sugar

Directions:
Directions:
Mix together eggs and pumpkin. Set aside. Mix dry ingredients together, then add pumpkin mix to dry and combine. Grease jelly roll pan, line with wax paper and grease paper. Pour batter into pan and spread out evenly. Bake at 375º for 13-15 minutes. Next, lay out a dish towel, sprinkle with powdered sugar. Turn hot cake out onto dish towel. Pull off wax paper. Roll cake in towel to cool.
For filling, blend all ingredients together till smooth. Once the cake is completely cool, unroll. Spread filling onto surface of cake. Roll again, without towel. Cut roll in half. Wrap and refrigerate. Freezes very well.
