6 to 7 potatoes
2 cups cottage cheese
1/2 pt sour cream (I usually use a little more)
1/2 cup onion, chopped (optional)
dash of garlic powder
1 tsp salt
pepper to taste
2 cups sharp cheddar cheese, grated

Directions:
Directions:
Boil potatoes. Cool, peel, and dice in small pieces. Combine cottage cheese, sour cream, onion, garlic powder, salt, pepper, and 3/4 cup of grated cheese. Stir into potatoes. Pour into a casserole dish that has been buttered or sprayed with vegetable cooking spray. Sprinkle with remaining cheese. Bake at 350º until cheese melts and browns. Serves 6 to 8.
