1 package active dry yeast,
2 1/2 cups warm water,
2 cups sifted flour,
1 T. sugar.

Directions:
Directions:
Dissolve yeast in 1/2 cup of warm water, stir in remaining water flour and sugar. Beat till smooth. Cover with cheesecloth; let stand at room temp. for 5 to 10 days, stirring 2 x a day. Let stand for shorter time if room temperature is warm. Cover and refrigerate till ready to use. To keep Starter going: add 3/4 c. water, 3/4 c. flour and 1 tsp. sugar to remaining Starter after some is used. Let stand at room temp. till bubbly and well fermented, at least 1 day. Cover and refrigerate. Add potato water or sugar if Starter is not used every 10 days.
