1 (3-4 lb) chuck roast with bone
2 lbs cabbage, cord and shredded
1 1/2 cup diced onion
3 or 4 carrots, trimmed and sliced
2 16 oz cans tomatoes with juice, chopped
8 gingersnaps, broken up
1 tsp. celery salt
1/2 tsp. dill weed
fresh ground pepper to taste
1/3 cup sugar
1/4 cup brown sugar
1 tsp. sour salt

Directions:

Bring chuck roast and 13 cups water to a boil. Simmer 30 minutes.
Skim off foam floating on top. Add ingredients through, pepper. Bring to a boil, stir well. Lower heat, partially cover and simmer for 3-4 hours. Or until meat is so tender it falls apart easily.
Add sugar and sour salt. Cook over medium heat for 15 minutes, uncovered. Taste. Refrigerate 2 day before serving.
To serve, discard carrots, remove meat, cut into bite-size pieces and return to soup.
