Pork and Ginger Pot Stickers Recipe

Ingredients: FILLING: 2 c chopped napa cabbage 1/2 T salt 1/2# ground pork (don't get lean) 2 T minced ginger ( I used ginger powder) 1-1/2 T minced garlic 2 T soy sauce 3 T sesame oil 1 egg 1-2 c chicken stock or water
1 Pkg wonton wrappers (usually found in dairy section)
DIPPING SAUCE:
1/3 c soy sauce 1/3 c rice wine vinegar 1/3 c sliced scallions 1 t. sesame oil 1 T. sambal

Directions:Sprinkle chopped cabbage with 1/2 teaspoon of salt and let stand for 30 minutes. Place on clean dishtowel and squeeze out excess water! (The dryer the cabbage the better). In large bowl, mix cabbage with remaining ingredients - EXCEPT the chicken stock.
Place a small mound of filling in middle of the wonton wrapper. Fold wrapper in 1/2 to form a half moon shape. Starting on one end, pinch wrapper tightly together on edges to seal. Rest the dumplings with the folded edges straight up.
Heat oil in saute pan (coat well!) Place pot stickers on flat side and cook until bottom is browned. Once they are all brown, Add 1 c chicken stock and cover immediately (Be careful! The stock will spatter). Steam pot stickers for about 5 minutes - may need to add more stock. The trick here is that once the dumplings are firm and fully cooked, the stock will evaporate and the bottoms will crisp-up again.
Prepare dipping sauce. Serve on large platter lined with lettuce & dipping bowl on side.
