1 spaghetti squash, about 3 lbs.
1 c. grated Gruyere
2-4 T. butter
1/4 cup parsley, chopped
1 garlic clove, minced
salt and freshly milled pepper

Directions:
Directions:
Preheat oven to 375 degrees. Slice the squash in half lengthwise and scoop out seeds. Bake facedown on a buttered tray for about 1 hour, or until easily pierced with a fork. Remove from oven and let cool only long enough to handle comfortably. Do not over cook. Now drag a fork through the flesh, pulling the strands apart. Toss them with the butter, garlic, parsley, and cheese. Season with salt and pepper to taste.

The Gruyere is great and has a very distinct taste. It is also expensive. If you're not feeling very adventurous and/or don't want to spend the money, try substituting Parmesan or Romano. They work great too! If I don't have any parsley handy I just skip it. Sam loves this stuff!!
