24 small Yukon gold potatoes
1 - 8oz pkg cream cheese, softened
1 c sour cream
1/2 cup crumbled cooked applewood-smoked bacon
2 tsp roasted mashed garlic
1 1/2 tsp salt, divided
1/2 tsp ground black pepper
3/4 c finely grated sharp cheddar cheese
3/4 c finely grated Monterey Jack cheese
3 T chopped green onion
Garnish: extra sliced green onion, freshly ground pepper

Preheat oven to 400º. Line a baking sheet with aluminum foil.
In a large Dutch oven, place potatoes and enough water to cover; bring to a boil. Boil for 8 minutes or until tender. Drain and let cool. Cut potatoes in half crosswise. Cut a thin slice off round end of each potato half to stand upright. Using a melon baller, scoop out centers of potatoes, leaving a 1/4 inch thick shell. Reserve potato pulp.
In a medium bowl, combine potato pulp, cream cheese, 1/4 c bacon, garlic (I always use more than directed), 1 tsp salt & pepper, mash with a potato masher until well combined. Stir in cheeses and green onion.
Sprinkle insides of potato shells with remaining 1/2 tsp salt. Spoon potato mixture evenly into potato shells; top with remaining 1/4 c bacon. Place stuffed potatoes on prepared baking sheet, and bake for 20 minutes or until lightly browned. Garnish with green onion and freshly ground pepper, if desired.

These are so good for a football party but are very time consuming when making in large quantities. I recommend purchasing a small melon baller if you don't already have one.
Also, I always boil extra potatoes because they easily split and break when scooping the potato out.
The hardest part about this recipe is making sure you have roasted your garlic beforehand. If you don't have a garlic roaster you can google how to roast it without one in aluminum foil. It takes about 1/2 hour to roast a bud of garlic.
These are nice to have pre-made for parties and pop in the oven as needed.
