3 T butter
4 garlic cloves, minced
3 T flour
salt and pepper
1/8+ nutmeg(optional)
1/8+ splenda
1 1/3c half&half
4 T cream cheese
2 - 10oz pkg frozen chopped spinach (thawed & squeezed)
1/3c+ fresh grated Parmesan

Preheat oven to 400º. Grease shallow casserole dish. In a medium pan, over medium heat melt butter and saute garlic until butter is lightly browned, stirring constantly. Whisk in flour and cook 1 min; remove from heat. Whisk in cream and seasonings. Return to heat and bring to boil, stirring constantly until thick. Remove from heat. Stir in cream cheese, spinach, and Parmesan. Pour into casserole and sprinkle with Parmesan. Bake 30 minutes, until bubbly and golden.

I use extra garlic and Parmesan to make this extra tasty. I also omit the splenda.
