Ingredients: Making the Broth -Chicken backs, thighs, carcass from chicken roast (any part of the chicken that has a fair amount of bone) -1 tsp each of Salt & Pepper -1 table spoon of whole All Spice (pickling spice) -Onion and Garlic
Now the Soup -Large Onion (chopped fine) -Spice to taste -2 cans of tomato soup -Noodles

Directions:Put the chicken in a pot covered with water, add salt, pepper, all spice, Onion, Garlic, bring to a boil then let simmer for at least 2 hours. After it has simmered pour thru a strainer to get all the bone, onion & pickling spice out of the broth.
Put the broth back on the stove, heat, add the chopped onion, and the two cans of tomato soup, let simmer until the onions are cooked, taste to see if you want to add anymore salt, pepper, seasoning spice etc Chop up any of the meat that was left on the bones and add to the broth. Add Noodles (any kind you want) cook until noodles are soft and then serve (goes great with grilled cheese sandwiches), nice on a cold winter night. |

Notes: If you want some extra spice or have a cold coming on add a good pinch of crushed pepper spice, heats up the body and usually breaks the cold. Maybe that part its mind over matter but it works for us. Earl’s married, and still asks Mom for chicken noodle soup when he’s not feeling good. I remember when we were young whenever we weren’t feeling good Mom would make this for us.
