Dried Beans.

Directions:
Directions:
1. Start with a pound of dried Beans. Sort them and discard any that are broken or discolored. Rinse until the water run clear.
2. Place the beans in a large soup pot with 6 cups of cold water. Boil 2 minutes.
3. Drain the water and replace with fresh . Let stand overnight or for at least 6 hours.
4. Drain well. Add fresh water. Bring to a boil then simmer, loosely covered until the legumes are tender, (Start checking lentils after 30 minutes; others will take up to 2 hours.)
Note: To save time, prep the beans ahead and store for later use. Beans prepare as above can keep for a week in the refrigerator or 6 months in the freezer. (Don't freeze lentils they turn mushy.)
