6 T butter
2 crisp, tart apples peeled, sliced thin
3 eggs
3/4 c milk
3/4 c flour
2 T lemon juice
1/2 t cinnamon
1/4 c brown sugar

Directions:
Directions:
Preheat oven to 425 degrees. Melt the butter on the stove top in a 10 inch skillet. Add apple slices and saute until soft ( about 5 min). Whirl eggs in blender at high speed for one minute. Add milk and slowly add flour until smooth. Sprinkle apples with lemon juice, cinnamon and brown sugar and mix well. Distribute slices evenly in a flat layer on the bottom of the skillet and careful pour batter over the apples starting in the center and working in concentric circles to cover apples completely. Place skillet in the oven and bake for 20 minutes until puffed and golden brown. Remove from the oven and let pancake deflate for a couple of minutes. Cut into wedges and serve from the pan.
