1 large onion
1 sm bellpepper
6 toes garlic 3 bay leaves
1/2 lb salted pickle pork
1 lb hot sausage
1 lb red beans
10 c water
2 cups rice

Directions:
Directions:
Chop onion, bell pepper, and garlic. Saute in olive oil until tender. Cut up salted pickle pork and brown on both sides in seasoning. Add 10 c of water and lb of red beans. Bring to a boil. Add bay leaves. Cook for approx. 3 hrs and add water as necessary until the beans are the consistency you desire. Add sausage approx. 1/2 hr before beans are ready. Serve over rice.
