thin spaghetti (for 2)
small onion chopped very fine
2 cloves garlic, minced or crushed
1/2-1 tsp red pepper flakes
3 T olive oil (Colvita-first cold pressed)
1 large can Italian plum whole tomatoes (cored, and cut in large pieces and loosely drained)
1/3 c parsley, chopped
3 or 4 fresh basil leaves finely chopped
1/3 c freshly grated Pecorino cheese
black pepper to taste

boil water for pasta. In large frying pan, gently saute onions, garlic, red pepper flakes over med-low heat for a few minutes. Add tomatoes and simmer 6-8 minutes. Stir occasionally. (Somewhere in the middle of this start cooking the pasta.) Add parsley and basil to tomato sauce and GENTLY cook for 3-4 more minutes. Turn off heat. Drain cooked past and put into large bowl. add tomato sauce and the Pecorino cheese.
toss and serve immediately. Pepper to taste, if needed. Enjoy with dry red wine!

I always save a little tomato juice in case the sauce looks dry at the end.

This recipe came from an Italian cookbook Dan got me in 1987. It is not expensive to make and it's delicious! We ate it at least once a week for many years back in those days.
