2 T extra virgin olive oil
1 T butter
4 cloves chopped garlic
1 medium chopped onion
4 ribs chopped celery
1 small chopped green pepper
1 small chopped red
2 tsp. thyme leaves
1 dried bay leaf
salt and pepper
1 T Worcestershire
2 T Franks Red Hot Sauce
4 T flour
1/2 c beer
1 c chicken stock
1 14oz. can diced tomatoes with green chilies
1lb boneless chicken breasts, cubed
1 Italian sausage sliced

Directions:
Directions:
Heat a large skillet over medium on high heat. Add oil and 1 T butter. When butter melts into oil, add garlic,onion, celery, bell peppers, thyme, bay leaf, and salt and pepper. Cook veggies 7-8 minutes or until tender. Add Worcestershire, hot sauce, and 2 T flour. Cook for 20 minutes. Meanwhile, in another large skillet and add the chicken and sausage. Cook for 8-10 min and then add to the other ingredients. Add 2 T flour and allow sauce to thicken. Cook another 10-15 minutes. Remove bay leaf. Serve over rice.
