2 Tablespoons Olive Oil
3-4 Chicken Breasts ( Boneless Skinless )
10 Ounces Mushrooms ( Sliced )
1 1/2 Cup Madera Wine
1 Cup Beef Broth
2 Tablespoons Butter
2 Cloves Garlic ( Minced )
1 Tablespoon Cornstarch
1/4 Teaspoon Black Pepper
Fresh Asparagus ( Cooked & Cut into Pieces )
2 Cups Shredded Mozzarella Cheese
Bow Tie Pasta (Cooked and Drained )

1. Pound each chicken breast to nearly 1/4 inch thick. Lightly salt and pepper.
2. Heat olive oil in deep saute pan over medium heat. Saute each chicken breast 4-6min per side or until the chicken has browned just a little. Remove chicken(chicken can be wrapped in foil to keep warm). Do not drain dippings from pan.
3. With the heat still on medium, add the butter, mushrooms pepper, and wine to the pan. Dissolve the cornstarch into the broth and then add to pan. Bring to a boil and then reduce heat and simmer for about 20min. The sauce should reduce in volume.
4. Coat a 9x13 baking dish with butter. Cut chicken into bite-sized pieces. Mix noodles, chicken, asparagus, and sauce and then add to baking dish. Top with shredded cheese.
5. Bake at 350 degrees for 15-20min(or until cheese melts).
