13 Large Carrots, peeled
24 Ritz Crackers, crumbled
2 Cups Sharp Cheddar Cheese, shredded
4 Tablespoons Butter, Melted
4 Tablespoons White Onion, chopped

Directions:
Directions:
Cut up the peeled carrots into large chunks, boil until soft, drain all water except 3/4 cup. Place drained carrots in mixing bowl, plus 3/4 cup retained water, add Ritz crackers, 1 Cup sharp cheese, white onion and melted butter. Mash together (I like to mash just until it's smooth, leaving a bit of carrot crunch). Place into a medium size casserole dish, top with remaining cheese. Bake at 450 degrees for 15 min.

The word "carrot" may not appeal to many people when they hear it, so I ask our friends to try my dish before I tell them what it is. Most love it and come back for seconds. It's one of our families favorite dishes and compliments most meat dishes. Enjoy!
