4 (1-inch) thick salmon fillets, skin removed
4 Tbsp butter
4 tsp grated lemon peel
4 tsp lemon juice
2/3 C sliced almonds
1-1/2 Tbsp chopped peeled fresh ginger

Cut out 4 heart shapes, each 12 inches wide by 9 inches long from heavy duty foil. Lay foil hearts flat on work surface. Butter foil lightly. Place fish fillet on 1 side of each foil heart. Dot each fillet with 1 Tbsp butter. Season with salt and pepper. Sprinkle 1 tsp lemon peel and 1 tsp lemon juice over each fillet. Top each with almonds and ginger, dividing equally. Fold second half of foil over fish fillet, enclosing completely; fold edges over to secure tightly. Place on heave baking sheet.

Preheat oven to 350º. Bake fish on baking sheet until packets are puffed and fish is cooked through, about 20 minutes.
