2 1/4 Cups 1/2 & 1/2
1/2 Tbsp Salt
1 1/2 Tbsp Sugar
3/4 Cup Cormeal
3/4 Cup All Purpose Flour
3 Eggs, Seperated
1 Stick Butter, Cubed
optional ingredients:
Green Onion
Cooked & Chopped Bacon
Roasted Red Peppers
Corn

Directions:
Directions:
Put 1/2 & 1/2, sugar, & salt in 2 qt sauce pan. Bring up to almost boil. Whisking quickly, Stir in flour & cornmeal avoiding lumping as much as possible. Stir vigourously for 2 min. Reduce heat to medium and stir for 1 min. Add egg yolks one at a time. Turn off heat & fold in butter. This is where you would add any of the optional ingredients Whip the egg whites to a stiff peak and fold into egg yolk mixture. Scrape mixture into a baking dish that will allow for it to rise 2 fold. Bake in oven at 350º. Now if you use tall loaf pan then bake for 45 min covered. Remove foil and bake for 15 min more. If you use a 9x13 then 30 min and about 15. The extra baking time is for browning the top.
