1/4 Pound Bacon
5 Cloves Garlic, Minced
1 Red Pepper, Diced
1/2 Yellow Onion, Diced
1 Stalk Celery, Diced (Optional)
1/4 Pound Snow or Sugar Snap Peas , Sliced
5-7 Ears Fresh Corn, Shucked, Kernels & Juices
1 Bunch Green Onion, Chopped
1 Bunch Parsley, Chopped
1/2 Stick Butter, Cubed
Salt, White Pepper, & Fresh/Dried Thyme to taste

Render Bacon at a medium to medium low temp on your stove in a 5-6 qt Stock Pot, Tall enough to give yourself room to work. Increase temperature to medium high, add garlic, onion, red pepper, & celery if you choose. Saute till onions are translucent stirring often about 5-7 min. Now, add corn, juices from the ears, & peas. Saute until corn is cooked about 6-8 min reducing your temperature to medium heat. Fold in cubes of butter, season to taste.
