1 big fat hen, disjointed
1 onion, diced
2 T. minced rosemary
1T. thyme

2 cups self-rising flour
2 T. poultry seasoning
1 cup buttermilk
1 egg, beaten

Cover chicken with water in a large pot, add onion, rosemary & thyme and boil until meat is falling off the bones. Then pull out the meat as well as anything floating in the broth (skin, etc.). Once the meat is cool enough to handle remove all fat, skin, veins, bones and cut meat into bite size chunks. Wrap the bones & place in a lidded trash can, then treat your fur child(ren) to the offal. Put the chunked meat back into the bubbling broth.

In a glass or metal bowl mix self-rising flour & poultry seasoning. In a separate bowl mix the buttermilk & beaten egg. Mix wet & dry ingredients together. You want a soft but not runny dough.

Using a large clean spoon, dip it into the broth then pick up a spoonful of the dough and put into the broth. The dough should slide off, but just give it a wiggle if it tries to stick. Continue dipping spoon into the broth then the batter until all batter is in, then turn the heat down until the broth is gently simmering. It will look crowded but just make everybody scoot over and snuggle together.

Cook with the lid off 10 minutes, then lid on 10 minutes and it's ready to ladle out.

IF there are any leftovers, the next day give everything a hard stir, reheat and serve over toast. YUM!
