1 whole fryer, cut in pieces
salt
pepper
flour
1 egg
1 1/2 cups milk
vegetable oil

Directions:
Directions:
Soak chicken pieces in salt water for about 2 hours. Drain and pat dry. Sprinkle with salt and pepper. Beat egg and milk together. Dredge in flour, then in milk/egg mixture and in flour again. Buttermilk can be substituted for milk/egg mixture. Heat vegetable oil (1 1/2 inches deep) in heavy skillet. Put chicken in hot oil and fry on medium heat until brown on each side. Cover and cook until done (time depending on size of chicken pieces).

This was a Sunday favorite when I was growing up. I don’t know how my mother and grandmother did this and never missed Sunday school and church.
