1 egg, beaten
1 pkg. Beef Rice-a Roni
1 pound ground beef
a little oil
2 1/2 C. hot water

Directions:
Directions:
Combine beaten egg and rice a roni. (Do not add package of seasoning yet. Add ground beef and blend well. I sometimes have to use my hands. Shape into small meatballs. Don't make too big. Brown on all sides in electric skillet. Sprinkle package of dry seasoning all over the meat balls. Pour 2 1/2 C hot water over the seasoning and meat balls. Cover and let simmer 45 min to 1 hr until done. You might have to add more water if it becomes too dry. Left-over can be refrigerated and served later. Don't heat in too hot of a microwave.
