-1 lb Uncooked pasta
-2 Tbsp Extra Virgin Olive Oil
-3 Tbsp Butter
-1 Medium onion, finely chopped
-3 Cloves garlic, finely chopped/grated
-3 Tbsp Flour
-1/2 cup White wine
-2 cups Milk
-3/4 cup frozen Spinach (defrosted,chopped, and wrung dry with towel)
-1/2 cup Artichokes (chopped and wrung dry with towel)
-1 1/2 cup Shredded Italian cheese
-1 1/2 cup Shredded Parmesan cheese
-Salt and Pepper to taste

Cook pasta and set aside.

On medium heat, combine olive oil with butter. Add onion and garlic to the pan. Cook until soft (about 10 minutes).

Turn up heat to medium-high and add flour to the pan and stir. Whisk white wine into pan and cook for a minute (to burn off alcohol). Whisk in milk and bring mixture to a bubble. Add spinach, artichokes, salt, and pepper and simmer until thickened (2-3 minutes more). Add 1 cup of each cheese to the sauce and stir until melted.

Toss pasta and sauce together and combine in casserole dish. Top with the rest of the cheeses.

Bake about 30 minutes on 300º (until browned).
