1 1/4 C. brown sugar
1/2 C. cooking oil
1 egg
2 tsp. vanilla
1 C. buttermilk
1 1/2 C. diced rhubarb
1/2 C. chopped walnuts
2 1/2 C. flour
1 tsp. soda
1 tsp. baking powder
1/2 tsp. salt

Topping:
1 tsp. melted butte
1/8 C. sugar
1 tsp. cinnamon

Directions:
Directions:
In a large bowl combine sugar, oil, egg, vanilla and buttermilk. Mix well. Stir in rhubarbs, walnuts and flavoring. Combine flour, soda, baking powder,and salt. Add to rhubarb mixture and mix. Spoon into greased muffin tins or paper cups.

For topping recipe below, combine melted butter, sugar and cinnamon and spoon over top of muffins. Bake at 350º for 20 - 25 minutes.
